This year I decided to plant Collards in the garden. I have probably eaten them once or twice in my life and I have never cooked them but I thought I would try something new. They were actually the first plant that came up in the garden and quite plentifully too. So last night I decided I would try them out. Once I figured out the proper way to cook them I was ready to go. Read on to see the yummy summer collard recipe...
Ingredients...
* Collards (I used around 20-30 leaves)
* 1 Tomato
* 1 Jalapeno
* 1/2 Onion (I used a small white onion)
* 2-3 Chopped Green Onion
* 4-5 Slices Bacon
* Olive Oil
* Garlic Salt
* Red Wine
* Butter
1. Chop the collards into smaller pieces and place them into a large cooking pot. Fill the pot with water, enough to cover the collards. Turn the stove top on high and bring water to a boil. Once water begins to boil add chopped white onion and chopped tomato to the pot. Continue to boil until collards have softened and are ready to eat.
2. Dice the Jalapeno and green onion and cook them with the bacon in a large skillet pan. Cut the bacon into smaller pieces once it is done. Add red wine and simmer for a minute.
3. Grease a baking dish with butter and add a little olive oil to the bottom of the dish. Add all ingredients to the baking dish. *Instead of draining the collards I used a vented spoon. For the bacon mix I used the same spoon allowing a little grease to transfer.
4. Top the dish with garlic salt and bake for about 10 minutes on 350*.
